Hi, I'm Chris Hui and this is my first ever post. So today we have is a chocolate coffee cake and in this post i will explain what the taste is, what are you able to change about it and how to make it.
This cake is not sweet, i am putting it out there but its very chocolatey and the reason why it is so chocolatey tasting then usual is because of the coffee, the coffee enhances the chocolate and it doesn't make the cake tast like coffee, the idea behind it is that since chocolate the non-processed 100% cocoa chocolate taste bitter and coffee it self is also bitter adding a bit of coffee to the chocolate will make it taste chocolately, its like adding another layer of chocolate is the basic idea. The cake's texture is extremely moist its not dense at all even if you put into the fridge it will still remain quite fluffy and moist and the chocolate taste is enhanced. Now this recipe makes 2 bricks of cake you can add buttercream frosting to it but my family prefers it that way.
The recipe
- 2 cups of sugar
- 1 cup of vegetable oil
- 1 cup of milk
- 1 cup of brewed coffee (room temperture)
- 2 large eggs or 3 medium sized eggs (room temperture)
- 1 teaspoon of vanilla extract
- 2 cups of flour
- 3/4 cocoa powder
- 2 teaspoons of baking soda
- 1 teaspon of salt
Instructions
- In a large bowl beat the eggs, sugar, coffee, milk, oil and vanilla till everything is well mixed.
- Mix the flour, salt, baking soda and cocoa powder.
- Mix the dry ingredients into the coffee mixture.
- Pour into a 10 by 20 cm pan or 9inch pan.
- Bake at a 325° at 25 - 30 mins or until a toothpick inserted in the center comes out clean.
- Let the cakes cool for about 10 mins before removing from the pan and serving.
What you can change
From my experience its best not to use a very strong brew as that can make the cake not sweet at all and there won't much taste, i used 3 tablespoons of coffee so its best to do around 2-2 1/2 tablespoons of coffee. You can also add a bit more of sugar if you want it to make slightly sweeter and using a frosting is another option if you think its not sweet. You can also substitute vegetable oil with butter.
